Hefty pancake in Karhunmäki style

1 l milk

4 eggs

1 tsp salt

3 – 4 tbsp sugar

5 dl flour

50 g butter, melted

  1. Whisk the eggs heavily to break the structure.
  2. Add 0,5 l of milk, sugar, salt and melted butter and mix well.
  3. Add the flour and whisk heavily, until the dough is smooth.
  4. Add the rest of the milk and mix until smooth.
  5. Butter a large baking tray and pour the dough in it.
  6. Bake in 200 C for 40 min.
  7. Serve with plenty of whipped cream and strawberry jam.

Grandma’s apple pie

75 g butter or margarine

1 – 1,5 dl sugar

3 dl flour

1 tl baking powder

2 dl Nordic kind of sour cream

3 – 4 apples

sugar and cinnamon for seasoning

  1. Mix the margarine and sugar in a bowl with fingers.
  2. Mix the flour and baking powder together.
  3. Add the flour mix and sour cream into the dough and mix until smooth.
  4. Butter a pie tin and spread the dough in it. Dab dough also on the tin edges.
  5. Slice the apples (no need to peel) and set them on top of the pie base. Sprinkle with sugar and cinnamon.
  6. Bake in 225 C for 20 minutes.
  7. Serve with vanilla sauce.

Notice! You can use this pie base also to make berry pies. Swap the apples with 5 dl of berries and season with a little bit of sugar. Try also a pie with rhubarbs!

Male Bear’s Delicious Cheese Cake

Ingredients for the base:

  • 20 pcs Rainbow Digestive biscuits (whole grain), crushed
  • 75 g butter

Ingredients for the core:

  • 2 dl Amarula Marula Fruit Cream
  • 500 g Rainbow Mascarpone cheese
  • 2 dl double cream, whipped
  • 80 g powdered sugar
  • 2 tsp vanilla sugar
  • 3 tsp Dr. Oetker’s Gelatine powder

Algorithm for the base:

  1. Butter the springform cake pan of your choice. Melt rest of the butter.
  2. Crush biscuits. Mix the crushed biscuits with the melted butter.
  3. Press and spread the mixture from step 2 on the bottom of the pan. You have created the base of the Delicious Cheese Cake.
  4. Put the pan in the fridge.

Algorithm for the core:

  1. Mix Amarula Fruit Cream, vanilla sugar, and gelatine powder together. Let the gelatine to swell for a while. Heat and stir the mixture until gelatine powder and vanilla sugar have been dissolved nicely. Let the mixture cool down while you make step 2.
  2. Whip cream. Mix whipped cream, mascarpone cheese, and powdered sugar together.
  3. Mingle together the mixtures from steps 1 and 2. You have created the core of the Delicious Cheese Cake.
  4. Take the pan from the fridge. Pour the core to the top of the base.
  5. Put the pan back in the fridge for at least four hours.

Bake for 15 minutes in 225 C temperature

Ingredients (for 2 persons):

  • 1 dl oatmeal (rolled oats)
  • 1 dl oat bran
  • 2 dl wheat flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 dl milk
  • 2 tbsp extra virgin canola oil
  1. Combine the dry ingredients.
  2. Add milk and oil mixing only until intermingled.
  3. Divide the dough into four heaps on a baking tray covered with baking paper.
  4. Flatten the heaps by patting them gently with wet hand.
  5. Bake for 15 minutes in 200 C temperature.
  6. Eat immediately with tea of your choice and butter (Oivariini 60 % will also do).

Ingredients for the cake:

  • 200 g butter
  • 4 eggs
  • 3 dl sugar
  • 5 dl wheat flour
  • 3 tbsp dark cocoa powder
  • 3 tsp baking powder
  • 2 tl vanilla sugar
  • 2 dl milk

Ingredients for the icing:

  • 50 g butter
  • 500 g powdered sugar
  • 2 tspb dark cocoa powder
  • 2 tsp vanilla sugar
  • 1 dl strong coffee

Decorating:

  • Nonpareils, sugar crystals, miniature marshmallows or anything you like

Baking the cake:

  1. Melt the butter in the microwave owen and let it cool.
  2. Mix the eggs and sugar into thick foam.
  3. Combine the dry ingredients and add the mixture into the egg foam alternately with milk.
  4. Add the melted butter into the dough.
  5. Cover a baking tray with a sheet of baking paper and pour the dough on it. Spread it over the baking tray smoothly, e.g. with a silicone scraper.
  6. Bake for 15 minutes in 200 C temperature.
  7. Let the cake cool.

Preparing the icing:

  1. Melt the butter in the microwave owen.
  2. Brew one cup of strong coffee (2 spoons of ground coffee for one cup of coffee)
  3. Combine powdered sugar, cocoa powder and vanilla sugar.
  4. Stir the coffee into the sugar mixture little by little – add coffee only so much that the mixture is smooth. If the mixture is too stiff, very carefully add more coffee. (If you add too much coffee, the mixture turns into liquid-like, and it can only be saved by adding more powdered sugar which you naturally don’t have any left.)
  5. Mix the melted butter into the sugar mixture.
  6. Spread the icing quickly over the cake – it stiffens fast!
  7. Decorate with nonpareils, sugar crystals, miniature marshmallows or anything you like.

Tip: if you don’t care for the icing so much, make only a half portion of it.

Male Bear’s Chocolate and Nut Cake

1,5 liter cake tin
bake approximately one hour in the temperature of 175 Celcius degrees

  • 200 g butter
  • 2,5 dl sugar
  • 3 eggs
  • 4 dl wheat flour
  • 1 tsp baking powder
  • 200 g baking-grade chocolate
  • 80 g grinded hazelnuts
  • 1 dl Nordic kind of sour cream
  1. Mix softened butter and sugar into a foam.
  2. Add eggs one by one, mix well.
  3. Combine dry ingredients.
  4. Add sour cream and part of the combined dry ingredients to the dough.
  5. Add rest of the combined dry ingredients to the dough.
  6. Bake in well lubed and bread crumbed cake tin.
